Fresh Apple Cake

3 cups grated apples
1 ½ cup oil
2 cups sugar
1 tsp. vanilla
2 eggs
1 ½ tsp. baking soda
1 tsp. salt
½ tsp. cinnamon
½ tsp. cinnamon
2 ½ - 2 ¾ cups flour
1 cup chopped nuts (opt)

Frosting:
8 oz. cream cheese
3 Tbs. butter
1 ½ cup powdered sugar
1 tsp. vanilla

Mix together and pour into a greased & floured 9x13 pan. Bake at 350° for 45 min – 1 hour. Spread frosting on cooled cake.
